I love brownies. It’s one of my favourite desserts! Sadly, the ones that you can usually find at the supermarkets are hyper caloric and contain lots of sugar, preservatives and colourants.
I recently found a recipe from Ella Woodward on the BBC food website that looked so yummy but I modified it a bit to my liking. They are delicious!
Ingredients:
2 medium-large sweet potatoes (600 grams)
14 Medjool dates, pitted
40 grams of milled flax, sunflower, pumpkin and sesame seeds & goji berries mixture (you can get this from Holland & Barrett in the UK. I have seen it in supermarkets too!)
40 grams of shelled hemp
1/2 mug buckwheat flour (100 grams)
4 tablespoons raw cacao powder
3 tablespoons agave syrup
pinch of salt
Preparation:
Preheat the oven to 180ºC. Peel and wash the sweet potatoes. Cut them into chunks and steam them until they become really soft.
Once they are soft and beginning to fall apart, remove them and add them to a food processor with the pitted dates. Blend until a smooth, creamy mix forms.
Put the remaining ingredients into a bowl, before mixing in the sweet potato and date combination. Stir well.
Place the mix into a lined baking dish and cook for about 20 or 30 minutes, until you can pierce the brownie cake with a fork.
Remove the tray and allow it to cool for about 10 minutes. This is really important, as the brownies need this time to stick together!
That’s it! As you can see, these brownies are incredibly easy to make, they won’t take you long and are a real healthy treat.
