Kiwi, coconut and chia popsicles

IMG_20160701_211306Wow, I can’t believe it’s been so long since the last time I posted an article on my blog. I have been feeling very demotivated with this horrible weather. I mean, seriously… IT’S JULY!!! When on earth is it going to stop raining!?!?

Fortunately I will be going on some very well deserved holidays soon so in order to get me into the summer mood I decided to make some popsicles. The recipe is not mine (I found it in “The Little Epicurean blog” which, by the way, is AWESOME!) but I thought that it was so delicious that it deserved being shared with everyone else! I will be making some more in the next few weeks so keep an eye on my food section 🙂

The reason why I like this recipe so much is that it contains ingredients that I love. I introduced kiwis into my diet about a year ago or so and it’s been a great discovery for me as it helps with my digestion. It also has coconut milk, soya milk, chia seeds (a great source of Omega 3) and agave syrup. The recipe is pretty simple, it makes about 10 popsicles and it will only take you about 15 minutes to prepare so this is the perfect alternative to those cheeky hyper caloric ice-creams!

I modified the amounts a bit so these are the ingredients that I used:

  • 240 ml of canned coconut milk. I used the brand Blue Dragon but you can get any that you like.
  • 240 ml of soya milk. I love ALPRO soya milk. This brand is simply amazing! You can check their products by clicking here.
  • 5 tsp of chia seeds. On this occasion I used milled ones but, if you prefer, you can use whole ones. I bought them in Holland and Barrett.
  • 3 tsp of agave syrup. Add more if you want your popsicles to taste sweeter.
  • 4 kiwis, peeled and sliced.

Instructions:

  1. Stir together the coconut milk, soya milk, chia seeds and agave syrup.
  2. Place the sliced kiwis into the popsicle moulds. Use chopsticks or the back of a spoon to press the kiwis to the sides of the mould.
  3. Gently pour the liquid mixture into the popsicle moulds. Insert the popsicle sticks. Freeze for at least 4 hours until the popsicles are solid.
  4. Enjoy!

The weather was glorious today. The sun was shining, girls were wearing skater dresses, others had sandals on, guys were looking cool with their sunglasses… which means that Summer is officially here! YAY!

I can’t wait to go on holiday so I can use all the new nail polish that I have bought recently. Here’s a selection of some of my favourites.

My first choice is the Rimmel 60 Seconds Super Shine by Rita Ora. I chose the shade 878 Roll in the grass. It is simply stunning! It has a green/turquoise tone that is perfect for the day. You can find this one in Superdrug for only £2.99. Besides, it dries so quickly that you’ll be able to apply it even if you are considering spending your day in the swimming pool.

The second one that I have chosen is Orly Color Blast Aqua Neon. Unlike the first one, this has a more blueish tone. It is so beautiful and stylish that you’ll be wanting to wear it all the time! I simply adore this one. You can find it at Boots for £6.33.

The next nail varnish that I have selected is My Pal Joey by O.P.I from the Hello Kitty nail polish collection. This is a medium/dark blue tone that is ideal for going out at night. It’s RRP was £11.50 but you can get it from Nail Polish Direct for just £5.95. They have some amazing deals on there!

I am also in love with the shade My Twin Mimmy (this one is part of the O.P.I Hello Kitty collection too). It has a shiny yellow colour that is chip resistant, long lasting and perfect for the music festivals season! You can purchase it for £8.95.

I had to include an orangey tone in my list so I chose the Do me a flavour nail varnish by Leighton Denny. I got myself this one when I spent a weekend at Ragdale Hall Health Hydro and Thermal Spa. You can find it here as part of a 12 set collection. It is a lovely tangerine colour perfect for those sunny days sunbathing on the beach!

I tend to wear a lot of red polish. It just looks so sexy and goes well with lots of different colours. My selection here is the Rimmel Kate Salon Pro 317 Hip Hop. I found it at Lloyds Pharmacy for £4.49.

If you don’t fancy colours that are too bright and prefer a more subtle look, then the 72 pink’ed Max Factor Glossfinity nail polish might be suitable. It is very easy to apply and dries pretty much instantly. There is a wide range of colours at Boots and it only costs £5.99.

Last summer I started to use the Rimmel 60 Seconds Super Shine 560 Lovey Dovey. You can buy it from Superdrug for £2.99. The quality is fantastic (as is the price!). It can last for up to a week and looks very shiny. All my friends kept making compliments about how beautiful it looked. It made me so happy!

If you like white tones, then you will love the Kitty White by O.P.I. It has a pearl finish that will make your nails look strikingly beautiful. If you want to obtain a more opaque effect, then all you need to do is apply two or three layers. You can purchase this one for just £5.55!

My last recommendation is the Rimmel 60 Seconds Rita Ora  558 Go Wild-Er-Ness. This is a mauve tone that looks a bit lighter than the 560 Lovey Dovey. The price is very affordable (only costs £2.99) and it will match those summer holiday outfits. Boots now has an offer that says that you can buy one Rimmel product and get a second one half price. I am definitely getting more of these!
